Comfort Foods for Fall: IDDSI Diet Recipe Ideas

At Marigold Speech & Co., we know that eating and drinking should be both safe and enjoyable. For individuals with swallowing difficulties (dysphagia), the International Dysphagia Diet Standardisation Initiative (IDDSI) provides clear guidelines to make meals safer without sacrificing flavor.
Today, we’re sharing some recipe and liquid ideas for common IDDSI diet levels — Level 4 (Pureed), Level 5 (Minced & Moist), Level 6 (Soft & Bite-Sized, no bread) — and for thickened liquid levels 2, 3, and 4.
IDDSI Level 4: Pureed
Foods at this level are smooth, lump-free, and hold their shape on a spoon.
Recipe Idea:
Creamy Butternut Squash Soup – Roast squash until soft, blend with low-sodium broth, and add a touch of cream. Ensure the final texture is completely smooth.
Other Ideas:
Mashed potatoes blended with gravy
Pureed chicken and vegetables (smooth consistency, no lumps)
Applesauce or pureed pears with cinnamon
IDDSI Level 5: Minced & Moist
Foods are soft, moist, and minced into pieces ≤4 mm for adults.
Recipe Idea:
Turkey & Gravy Mince – Cook ground turkey with broth, finely mince, and serve with soft, moist mashed sweet potatoes.
Other Ideas:
Finely minced salmon with a creamy dill sauce
Moist scrambled eggs with melted cheese
Cottage cheese with pureed peaches
IDDSI Level 6: Soft & Bite-Sized (No Bread)
Foods are tender, moist, and cut into 1.5 cm bite-sized pieces. Bread is not recommended, as it can pose a choking risk.
Recipe Idea:
Soft Beef Stew – Slow-cooked beef until very tender, cut into small bite-sized pieces, served with cooked carrots and potatoes.
Example Stew Recipe (adapt by cutting into IDDSI-appropriate size).
Other Ideas:
Soft-cooked pasta with creamy tomato sauce (no bread)
Moist chicken casserole, cut into bite-sized pieces
Banana slices topped with yogurt
🍂 Fall-Inspired Drinks by IDDSI Level
Level 2: Mildly Thick (Nectar-Like)
Apple Cider Smoothie
Blend apple cider with cooked apples, vanilla yogurt, and cinnamon. Thicken as needed until it flows like nectar.
Level 3: Moderately Thick (Honey-Like)
Pumpkin Spice Latte (SLP-Approved!)
Warm milk or decaf coffee blended with pumpkin purée, maple syrup, and pumpkin pie spice. Thicken to honey-like consistency.
Level 4: Extremely Thick (Pudding-Like)
Hot Chocolate Pudding Cup
Prepare hot cocoa with milk and cocoa powder, then thicken to spoon-thick consistency. Serve warm with a sprinkle of cinnamon.
Final Thoughts
Living with dysphagia can be challenging, but safe eating doesn’t mean boring eating. With a little creativity and adherence to IDDSI guidelines, meals and drinks can remain both nutritious and enjoyable.
